Broccoli & Cheese Soup

 Today, I am making broccoli/cheese soup...  using fresh broccoli...  two bunches...


I cut up on broccoli bunch along with one onion and heat them in a pot of water.  Once they are soft, I pour the mixture into a Ninja blender and mix it up for 2-3 minutes, maybe a little longer to make sure it is all liquid.


Back into the pot the mixture goes, and I add two tablespoons of soup starter from Creamy Cauliflower and Creamy Mushroom containers.  I got these containers from Yoder's an Amish store nearby by.


As this mixture cooks, I add black pepper and dice up the second bunch of broccoli.  Once that cooks for about an hour, I will add 4-6 slices of cheddar sliced cheese and make sure that is blended in properly.  I let that mixture cook for another 60 minutes then cool and put into plastic container for later consumption.


I do not add cream or half n half to give it another texture because it adds in too many calories and the way I have made it is perfectly fine on taste for me.


My soup is enough for 3 meals and has about 100 calories per bowl.


Finally, I will take out a baguette from the freezer, thaw it out, and eat with the soup.  The baguette was purchased from SAMS and cut into quarters, wrapped and put in the freezer for later consumption.


With the bread, my meal is 320 calories.
